For the cupcakes:

  • 120g all-purpose flour
  • 60g unsweetened cocoa powder (use Godiva if available)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 120g unsalted butter, softened
  • 200g granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 60g Godiva chocolate, melted and cooled
  • 177ml whole milk

For the chocolate ganache:

  • 118ml heavy cream
  • 120g Godiva chocolate, finely chopped

Instructions:

  1. Preheat your oven to 175°C (350°F). Line a cupcake tin with paper liners.

  2. In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

  6. Gently fold in the melted and cooled Godiva chocolate until evenly distributed in the batter.

  7. Add the flour mixture to the batter in three parts, alternating with the whole milk. Begin and end with the flour mixture, mixing until just combined.

  8. Spoon the batter into the prepared cupcake liners, filling each about two-thirds full.

  9. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and allow the cupcakes to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

  10. In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and pour over the chopped Godiva chocolate. Let it sit for a minute, then stir until smooth.

  11. Once the cupcakes are completely cooled, dip the tops into the chocolate ganache or drizzle it over the cupcakes for a decadent finish.

  12. Optional: Garnish with chocolate shavings or sprinkles. If you’re feeling fancy, you could even pop one of our assorted chocolates or chocolate truffles on top for a luxurious finishing touch.
