The robust look of the Noix Macadamia reveals an amazing combination of two different praliné fillings. The upper layer consists of short bread biscuit praliné while the lower layer is made of hazelnut praliné. Imbedded in the top layer lies a whole macadamia nut. A true and intense chocolate experience enhanced by the delicate flavour of the slightly salted macadamia nut, considered a delicacy in Japan. Hazelnut praliné flavoured with coffee Candied in sugar

 

The Rosace is an admirable example of chocolate artisanship. The coffee and hazelnut praliné swirl offers a surprisingly fragile crisp surface of crystallised sugar. To obtain its crispy surface every Rosace is kept 24 hours in a liquid sugar bath and then left to dry naturally till the sugar is nicely crystallised at the surface. The Rosace is a reference to the beautiful stained glass artworks that can be found in many cathedrals across Europe. Chef Ilse recommends: “I love the smooth coffee flavour and the light crunch that comes from its fragile sugar coating. It’s a delicate piece to prepare and demands a certain craftsmanship.”

Our signature hazelnut praliné in a chic, Art Nouveau milk chocolate swirl. The Tourbillon evokes the fluid curves used in the 19th century “Art Nouveau” architectural style. Belgian architect Victor Horta was one of the leading Art Nouveau (New Art) architects in Belgium around the turn of the 19th century. Art Nouveau is a philosophy in art and architecture that seeks its inspiration in natural forms and structures, not only in flowers and plants but also in curved lines. Architects tried to harmonise with the natural environment.
