Boasting a powerful ganache with intense 85% cocoa chocolate, this piece was inspired by Godiva’s iconic Tourbillon 85 dark chocolate. Explains Chef Jean: “this gorgeous deep brown macaron is incredibly well-balanced. The bitterness of the high-quality dark ganache is complemented beautifully by the sweetness of the shell. It leaves a delicious lingering taste on the palette.”
Filled with a smooth praline filling center that is infused with premium hazelnut powder and a hint of cacao, this piece celebrates “Godiva’s hand-roasted praliné recipe that was created by the chocolatier’s Maître Chocolatier, Pierre Draps”, explains Chef Jean.
“Zesty, vital and powerful” are the words Chef Jean uses to describe the Lemon macaron. Its bold yellow colour cues the zingy taste of the lemon-flavoured white chocolate filling. The piece recalls some of Pierre Draps’ original recipes, which were infused with hand-squeezed lemon juice.
Inspired by the flowery vanilla notes in Godiva’s iconic Lady Noir chocolate; ground vanilla bean infuses the smooth filling on this biscuit-coloured piece. Chef Jean describes it as “sweet, familiar, melting and indulgent with subtle floral notes that remind me of the wonderful Lady Noir”.
Created in homage to Godiva’s 90th raspberry rose anniversary flavour, this pink macaron is fresh, floral and wonderfully unique. The sweet outer shell and filling are elevated by the “burst of flavour from the tangy raspberry and the floral notes of the rose oil”, explains Chef Jean.
